West African Beans And Okra Recipe

Ingredients
  • 4 tbs oil
  • 1 onion, pureed
  • 1 tsp cayenne pepper
  • 1 tbs fresh thyme, chopped
  • 18 okra pods, cut in half lengthwise
  • 4 tomatoes, chopped and pureed in a food processor
  • 10 oz green beans
  • handful of cilantro leaves, chopped
  • 2 cups cooked black-eyed peas
  • salt and pepper to taste
  • water or vegetable broth as needed

Directions
  1. Heat the oil in a large saucepan over medium heat and saute the onion until soft.
  2. Add the cayenne and thyme and cook briefly. Add the okra, tomatoes, green beans, and cilantro, and cook over low heat for 15 minutes stirring occasionally. Add the black-eyed peas, mashing them a little with a fork. Season with salt and pepper and add a little water or broth to loosen the mixture. Serve.
