West African Beans And Okra

- 4 tbs oil shopping list
- 1 onion, pureed shopping list
- 1 tsp cayenne pepper shopping list
- 1 tbs fresh thyme, chopped shopping list
- 18 okra pods, cut in half lengthwise shopping list
- 4 tomatoes, chopped and pureed in a food processor shopping list
- 10 oz green beans shopping list
- handful of cilantro leaves, chopped shopping list
- 2 cups cooked black-eyed peas shopping list
- salt and pepper to taste shopping list
- water or vegetable broth as needed shopping list
How to make it
- Heat the oil in a large saucepan over medium heat and saute the onion until soft.
- Add the cayenne and thyme and cook briefly. Add the okra, tomatoes, green beans, and cilantro, and cook over low heat for 15 minutes stirring occasionally. Add the black-eyed peas, mashing them a little with a fork. Season with salt and pepper and add a little water or broth to loosen the mixture. Serve.

Love the flavors of okra and tomatoes. One of my favorite dishes is named for the West African word for okra. (Gumbo) \0
