This is an easy compote, delicious for breakfast or a quick snack over some crackers.

Ingredients
  • 2 lb cherries, stoned weight
  • 1 lb 2 oz jam sugar (the one that has pectin added)
  • juice of 1/2 lemon
  • 4 tsp brandy
  • 1 cinnammon stick

Directions
  1. Put the cherries into a wide, deep frying pan, add 1/2 cup of water, then bring to a boil. Cook for 15 min, stirring every now and then until the fruit is starting to soften.
  2. Add sugar and stir until it dissolves, add the lemon juice, brandy and cinnammon stick, then bring to a boil again.
  3. Cook for 15 min until the fruit has collapsed a little and the sauce is syrupy, smooth and dark purple. Spoon a little of the juice onto a plate and leave to cool for 30 sec. Push it with your finger, it is ready if the syrup wrinkles.
  4. Ladle into sterilised jars and seal.

Alterations


TIP:
To sterilise your jars, wash well in hot, soapy water, then leave to dry in a low oven. Or... run them through a dishwasher cycle. Fill the jars while they're still warm.
