Easy Cherry Compote

- 2 lb cherries, stoned weight shopping list
- 1 lb 2 oz jam sugar (the one that has pectin added) shopping list
- juice of 1/2 lemon shopping list
- 4 tsp brandy shopping list
- 1 cinnammon stick shopping list
How to make it
- Put the cherries into a wide, deep frying pan, add 1/2 cup of water, then bring to a boil. Cook for 15 min, stirring every now and then until the fruit is starting to soften.
- Add sugar and stir until it dissolves, add the lemon juice, brandy and cinnammon stick, then bring to a boil again.
- Cook for 15 min until the fruit has collapsed a little and the sauce is syrupy, smooth and dark purple. Spoon a little of the juice onto a plate and leave to cool for 30 sec. Push it with your finger, it is ready if the syrup wrinkles.
- Ladle into sterilised jars and seal.
