Ingredients

How to make it

  • Grease a 3 cup small casserole.
  • In skillet, saute zucchini, onion, red pepper and garlic in butter just until tender. (If I have fresh mushrooms, I add these as well.)
  • Cool slightly.
  • In bowl, beat together eggs, milk or half and half and seasonings.
  • A dash of cayenne pepper can be added as well for a little "zip".
  • Fold in zucchini mixture.
  • Pour into casserole.
  • Sprinkle with cheeses.
  • Bake at 400 degrees for 14 to 17 minutes or until top is puffy and light golden brown.
  • Let stand 5 minutes.
