Baked Zucchini Frittata for One or Two

- 1 small zucchini, sliced shopping list
- 1/4 cup sweet or red onion, chopped shopping list
- 1/2 red bell pepper, julienned shopping list
- 1 clove garlic minced shopping list
- 1 tablespoon butter shopping list
- 3 eggs shopping list
- 3 tablespoons milk or half and half shopping list
- 1/4 teaspoon salt, or to taste shopping list
- 1/4 teaspoon italian seasoning shopping list
- 1/2 cup monterey jack cheese, shredded shopping list
- 1/4 cup parmesan cheese, shredded shopping list
How to make it
- Grease a 3 cup small casserole.
- In skillet, saute zucchini, onion, red pepper and garlic in butter just until tender. (If I have fresh mushrooms, I add these as well.)
- Cool slightly.
- In bowl, beat together eggs, milk or half and half and seasonings.
- A dash of cayenne pepper can be added as well for a little "zip".
- Fold in zucchini mixture.
- Pour into casserole.
- Sprinkle with cheeses.
- Bake at 400 degrees for 14 to 17 minutes or until top is puffy and light golden brown.
- Let stand 5 minutes.
