Texas Pecan Pesto Recipe
Barbecue Biscuits and Beans by Bill Cauble and Cliff Teinert. Yields 1 1/4 cups pesto.

Ingredients
  • 1 cup Basil or cilantro leaves, packed
  • 1/2 cup Pecans
  • 3 garlic pods
  • 1 tbs Lime Juice or balsamic vinegar
  • 1/2 cup Olive Oil
  • 1/2 tsp Salt
  • 1 tbs black pepper
  • 4 tbs Parmesan cheese, shredded

Directions
  1. Add all ingredients; except cheese, to blender. Blend well. Stir in Parmesan cheese. Serve with 1 pound fresh pasta.
