Ingredients
  • 1 1/2 cups buttermilk
  • 1/2 cup beer
  • 3/4 lb Monterey Jack cheese, shredded
  • 2 Tbsp cornstarch
  • 2 tsp prepared mustard
  • Pinch salt
  • Dippers: cubed rye bread, cocktail wienies, fresh vegetable crudites such as cherry tomatoes, broccoli, cauliflower

Directions
  1. Mix cheese and cornstarch in a bowl; set aside.
  2. Heat buttermilk and beer over medium heat, in a medium size saucepan, just until it starts to bubble around the edges.
  3. Add cheese mixture, a handful at a time, to saucepan, stirring until melted and smooth after each addition. Continue cooking and stirring just until it starts to bubble. Stir in mustard and salt to taste.
  4. Transfer cheese mixture into an earthenware fondue pot of chafing dish set over a flame to keep warm.
  5. Serve with dippers and watch it disappear!
