This is an easy tasty recipe, for someone who might want the flavor of pumpkin but not in a pie. Also this version is more of a low fat type. I have made this without the pumpkin pie spice, and it is still good.

Ingredients
  • 1 (4 serving) pkg. sugar free instant vanilla pudding mix
  • 1 cup canned pumpkin
  • 1/2 tsp. pumpkin pie spice
  • 2 cups skim milk
  • 1/4 cup cool whip lite

Directions
  1. In a medium bowl combine the dry pudding mix, pumpkin, spice and milk.
  2. Mix well using a wire wisk.
  3. Pour into 4 dessert dishes.
  4. Top each with 1 Tbsp. lite cool whip.
  5. Refridgerate till ready to serve.

Also, you may sustitute a 16 oz can of evaporated milk for a very creamy flavor.
