  • Ingredients:
  • 2 cups cooked pork loin strips
  • 1 can ( 16-oz ) Kidney beans, rinsed and drained
  • 1 medium onion, chopped
  • 1 large pepper, chopped
  • 1 large tomato, chopped
  • ½ cup pitted medium olives sliced to like rings
  • Diabetic Substitute the following 2 ingredients with Fat-Free Vinaigrette or Cajun
  • ¼ cup cider vinegar
  • ¼ cup canola oil or olive oil
  • 2 Tbs. sugar ( Diabetic= sugar substitute )
  • 2 Tbs. minced fresh parsley
  • 1 tsp. Ground mustard
  • 1 tsp. Ground cumin
  • 1 tsp. Dried oregano
  • ½ tsp. Salt ( Diabetic = None )

Directions
  1. In a large bowl, combine the pork, beans, onion, green pepper, tomato and olives. In a small bowl, whisk the remaining ingredients. Pour over salad; toss gently to coat. Cover and refrigerate for 4-6 hours, stirring occasionally.
  2. I have added modifications for diabetics.
  3. Nutrition: Calories per serving 450 – modified 360, Fat: 22g – modified 7g, Cholesterol: 63mg – modified 48mg, Sodium: 675mg – modified 450mg, Carbohydrate: 35g – modified 28g
