SOUTHWESTERN PORK SALAD DIABETIC FRIENDLY

- Ingredients: shopping list
- 2 cups cooked pork loin strips shopping list
- 1 can ( 16-oz ) kidney beans, rinsed and drained shopping list
- 1 medium onion, chopped shopping list
- 1 large pepper, chopped shopping list
- 1 large tomato, chopped shopping list
- ½ cup pitted medium olives sliced to like rings shopping list
- Diabetic Substitute the following 2 ingredients with Fat-Free vinaigrette or Cajun shopping list
- ¼ cup cider vinegar shopping list
- ¼ cup canola oil or olive oil shopping list
- 2 Tbs. sugar ( Diabetic= sugar substitute ) shopping list
- 2 Tbs. minced fresh parsley shopping list
- 1 tsp. ground mustard shopping list
- 1 tsp. ground cumin shopping list
- 1 tsp. Dried oregano shopping list
- ½ tsp. salt ( Diabetic = None ) shopping list
How to make it
- In a large bowl, combine the pork, beans, onion, green pepper, tomato and olives. In a small bowl, whisk the remaining ingredients. Pour over salad; toss gently to coat. Cover and refrigerate for 4-6 hours, stirring occasionally.
- I have added modifications for diabetics.
- Nutrition: Calories per serving 450 – modified 360, Fat: 22g – modified 7g, Cholesterol: 63mg – modified 48mg, Sodium: 675mg – modified 450mg, Carbohydrate: 35g – modified 28g
