Potato Salad

- 2 pound small potato either red (perferred) or white shopping list
- 7 hard boiled eggs shopping list
- 1 cup diced celery shopping list
- 2 tbsp diced dill pickles shopping list
- 3/4 to 1 cup mayo shopping list
- 1/4 to 1/3 cup sour cream shopping list
- 2 tbsp dill pickle juice shopping list
- 1 tbsp yellow mustard shopping list
- 1 tbsp Dijon mustard shopping list
- 2 tsp dried dill shopping list
- 1 tsp paprika shopping list
- pinch of cayene pepper shopping list
- 1/2 tsp salt shopping list
- pinch of pepper shopping list
How to make it
- cut potatoes into quarters and cook till fork tender. (i like to steam my potatoes when making a salad with them
- while potatoes are cooking mix everything except the eggs in a large boil.
- Add 5 of the eggs diced into the mix.
- Chill in the fridge.
- Allow cooked potatoes to cool slightly then add to chilled mix
- slice last 2 eggs and fan on top.
- put in fridge overnight.
