stuffed meatballs

- 1 lb lean ground beef shopping list
- 1 lb ground pork shopping list
- 1/2 cup seasoned bread crumbs shopping list
- 1 container of frozen spinach shopping list
- 2 cups of shredded mozarella cheese shopping list
- 2 eggs shopping list
- 2 tsp onion powder shopping list
- 1 tbsp granulated garlic powder shopping list
- 1 tsp salt shopping list
- 1 tsp pepper shopping list
- pasta sauce shopping list
How to make it
- combine beef, pork, breadcrumbs, and spices in a bowl, (you do not want to over work the meat.)
- mix spinach, cheese and eggs together
- take spinach mix and roll little balls the approx size of a quarter in diameter
- take heaping tbsp of meat mix and gently flatten
- put spinach ball in center and fold meat mix around it pinching sides together like a perogie and remove any excess meat
- begin to roll into a ball.
- I use a cookie cooling rack to put my meatballs on
- place in fridge to set for 1 hour
- put in oven, or if you have a smoker even better
- cook at 325 for approx 30 min. I cook it on the cooling rack with a pan underneath to collect the grease.
- simmer in your favorite pasta sauce for 1 hour.
