With the holidays approaching and large meals - this is a real classy, light although rich dessert that tops off any holiday meal - on our table every christmas

Ingredients
  • 1 tbl gelatin (i envelope)
  • 4 tbsp cold water
  • 2 cups milk
  • 1/2 cup sugar
  • 1 1/4 tbl cornstarch
  • vanilla wafers
  • 4 egg whites
  • 1/4 tsp salt
  • 4 egg yokes
  • 1 container cool whip
  • coconut
  • 1/2 cup sugar
  • 1/4 tsp cream of tarter
  • 1 tsp vanilla

Directions
  1. Butter baking dish and line with whole vanilla wafers
  2. Soak gelatin in water
  3. Scald milk , combine sugar, salt and cornstarch and stir into hot milk
  4. Beat egg yokes and slowly add milk mixture (slow so eggs dont cook)
  5. Return to pan and cook over hot (not boiling) water until thick and it coats a spoon
  6. Remove from heat, add gelatin and cool
  7. Beat egg whites with a scant 1/2 cup sugar, 1/4 cream of tarter, and 1 tsp vanilla
  8. Fold into cooled milk mixture and pour into the baking dish with the vanilla wafers (13x9x2)
  9. Chill overnight
  10. next day cover with cool whip and coconut and return to refrigerator until served
