This recipe is a crowd pleaser. Serve it with fresh corn and grilled vegetables. The smoked planked gives an incredible flavor to the fish.

Ingredients
  • DESSING
  • 1 tbsp fresh lime or lemon
  • 1 tbsp rice vinager
  • 1 tbsp Dijon mustard
  • 1 tbsp honey
  • 1 tbsp of minced chives
  • 1/2 kosher salt
  • 1 clove of minced garlic clove
  • fresh ground red pepper corns
  • 1/4 tsp ground cayenee peper
  • 1/8 cup extra virgin olive oil
  • SALMON
  • salmon fillet (with skin), 2-1/2 to 3 pounds, about 16 inches long and 3/4 inch thick
  • Salt and pepper
  • untreated cedar plank (about 16 inches by 8 inches and at least 3/4 inch thick), submerged in water for at least 1 hour perferrable for longer

Directions
  1. Wisk the dressing ingredients except the oil. Mix until well blended.
  2. Slowly wish in olive oil until well mixed.
  3. Season the fish with salt and pepper
  4. Pour 1/2 the dressing over the salmon evenly
  5. Place the soaked plank over Direct High heat until the edges start to smoke and char, 5 to 10 minutes. Move the plank over Indirect High heat and place the salmon, skin side down, on the plank. Grill until the salmon is just slightly pink in the center and brown on the edges, 20 to 25 minutes. Transfer the plank and salmon to a heatproof surface.
  6. Serve warm with remaining dressing
  7. Wine Pairing: light crisp Chardonnay
  8. Menu: Corn on Cob, Cucumber Cilantro Salsa
