How to make it

  • Heat oil and butter in a large heavy skillet over medium heat. When foam subsides saute chicken turning once, until lightly browned.. Remove from pan, transfer to large plate, spinkle with sage. Wrap each piece of chicken with prosciutto. Add marsala to skillet (medium to high heat ) and deglaze the pan until liquid reduces and thickens. Add cream, reduce until thickened, turn to low. Season to taste with pepper. Return chicken to pan, cook spooning sauce over chicken just until heated. Sprinkle with parsley if desired and serve.

    I have a bottle of marsala that I had no idea what to do with until this dish inspired me. Trying to figure out how I could incorporate my new slow cooker into this.......hmmmm.

    I'll be back, like the Terminator.
