Chicken Breast with Prosciutto and Marsala Wine Sauce

- 4 boneless chicken breast, skinned and halved shopping list
- 2 tsbp. olive oil shopping list
- 3 tsbp. butter shopping list
- 1 tsp. dried sage (I use McCormick's Gourmet Collection Rubbed Dalmation Sage and just crumble it between my fingers) shopping list
- 8 thin slices prosciutto shopping list
- 1/2 cup dry marsala wine shopping list
- 1/3 cup heavy cream shopping list
- 1/2 cup chopped fresh mushrooms (I like to use a gourmet blend of baby bella, shiitake and oyster mushrooms prepackaged from the grocery store) shopping list
- pepper shopping list
How to make it
- Heat oil and butter in a large heavy skillet over medium heat. When foam subsides saute chicken turning once, until lightly browned.. Remove from pan, transfer to large plate, spinkle with sage. Wrap each piece of chicken with prosciutto. Add marsala to skillet (medium to high heat ) and deglaze the pan until liquid reduces and thickens. Add cream, reduce until thickened, turn to low. Season to taste with pepper. Return chicken to pan, cook spooning sauce over chicken just until heated. Sprinkle with parsley if desired and serve.
