How to make it

  • Sweat the onions in olive oil until soft.
  • Add stock, crab, corn.
  • Spice to your taste, I use:
  • 1/2 t white pepper
  • 1-2 t salt
  • 1-3T old bay
  • 1/4-1/2 cayenne.
  • Cook 30-15 minutes, thicken with a roux and add the half and half (or cream) at the end.
  • Goes great with those knock off Red Lobster biscuits

    I almost forgot! My favorite way to add some heat to this is to omit the cayenne and finely mince in a small chipotle in adobo. Makes it a "softer" heat that you'll feel in your throat mostly.
