How to make it

  • Toast cumin in dry pan for 2 minutes or until fragrant
  • Heat oil in skillet and saute garlic and ginger for 2 minutes.
  • Combine all ingredients in large pot.
  • Bring to a boil, then simmer for 30-45 minutes (or until the quinoa and sweet potatoes are fully cooked), adding water as needed.
