Bourbon Pie

- Crumb Crust: 1 1/2 cup vanilla wafer crumbs shopping list
- 1/2 cup melted butter shopping list
- 1 tablespoon sugar shopping list
- 1/2 cup crushed pecans shopping list
- Filling: 1/2 lb butter, no substitutes shopping list
- 1 box (1lb) confectioners' sugar shopping list
- 6 eggs shopping list
- 1/3 cup bourbon shopping list
How to make it
- Combine the first four ingredients to make the crust
- Press into a 10 inch pie pan
- Bake 5 minutes at 400 degrees
- Cool completely
- Cream the 1/2 pound of butter and confectioners' sugar with a large standing mixer
- Add eggs, one at a time, and mix very well after each addition
- Use only 5 eggs if you have a small mixer
- Add bourbon in a very slow stream. Bourbon cooks the egg mixture.
- The filling will look curdled at first, but will become smooth and creamy
- Turn into cooled crust and chill or freeze for a couple of hours
- Improves and mellows with age
