How to make it

  • Combine the first four ingredients to make the crust
  • Press into a 10 inch pie pan
  • Bake 5 minutes at 400 degrees
  • Cool completely
  • Cream the 1/2 pound of butter and confectioners' sugar with a large standing mixer
  • Add eggs, one at a time, and mix very well after each addition
  • Use only 5 eggs if you have a small mixer
  • Add bourbon in a very slow stream. Bourbon cooks the egg mixture.
  • The filling will look curdled at first, but will become smooth and creamy
  • Turn into cooled crust and chill or freeze for a couple of hours
  • Improves and mellows with age
