How to make it

  • Set oven to 350 degrees F. Blanch the potatoes in boiling water until tender firm, not soft. Remove and place on paper towels until all the water is absorbed. Heat a shallow oven proof pan in the oven until hot. Toss the potatoes with the olive oil and place them in a single layer in the hot pan, sprinkle with chili seasoning and salt and pepper. Roast, turning once, until golden brown on both sides.
