Basque Fish Stew

- 16 oz firm fish fillets, such as tuna or Mahi-Mahi, shopping list
- ( I used frozen Mahi I bought on sale) Cut into bite sized chunks.(skin fish if needed) salt & pepper, cover and set aside. shopping list
- 1 can diced tomatoes on juice, or 3 large Romas, seeded and diced. shopping list
- 1 red onion, sliced thinly shopping list
- 3-4 garlic cloves, sliced thinly shopping list
- 1/2 red bell pepper, seeded and diced shopping list
- 3-4 red potatoes, cut into 1 1/2 inch pieces shopping list
- 1 1/2 tbsp olive oil shopping list
- 1 bay leaf shopping list
- 1/2 tbsp paprika shopping list
- 2 tbsps capers, rinsed shopping list
- 1/2 cup white wine shopping list
- fresh chopped parsley for garnish shopping list
How to make it
- Heat a large sauce pan to medium heat.
- Add olive oil.
- Saute the onion and garlic until soft.
- Add everything else EXCEPT fish to the pan.
- Add water if needed to cover the vegetables.
- Bring to a boil then simmer , covered for 25 minutes.
- Add fish and cook for 4 more minutes
- Sprinkle with parsley.
- Serve immediately with some crusty bread..
