How to make it

  • Cover the farro with cold water and let sit for 30-60 minutes.
  • Drain and place in pot with 2 quarts of stock or water.
  • Bring to boil uncovered, turn down to simmer and cook uncovered for 30 minutes.
  • Drain and toss with 1/4 cup of olive oil and 2 Tbsp of red wine vinegar. Season with salt and pepper.
  • Add the veggies, stir well and serve.
