How to make it

  • Preheat the oven @ 350 degrees.
  • Using a mixer, set on low, mix the first 4 ingredients together in a large bowl. Set aside.
  • Using a mixer, set on low, mix the next 4 ingredients together in a medium bowl. Set aside.
  • Fold in 1/4 of the cheesecake mixture into the pumpkin mixture.
  • Fold half of the cream cheese mixture into each graham cracker crust.
  • Fold half of the pumpking mixture on top of the cream cheese mixture. Gentlely swirl the mixures (don't mix completely!) together, then smooth the mixture out.
  • Bake to cheesecakes for one hour, or until a toothpick to the center comes clean.
  • Remove cheesecakes from oven and cool for about an hour.
  • While cheesecakes are cooling, mix the container of whipped topping with the ginger.
  • After cheesecakes are cool, spread a layer of sour cream over each.
  • Then layer with whipped topping mixture.
  • Optional: sprinkle chopped pecans over whipped topping mixture.
  • Enjoy!
