Mommas Pumpkin Cheesecake

- 4 pkgs of cream cheese @ room temperature shopping list
- 2 lg eggs shopping list
- 3 T imitation vanilla shopping list
- 1 1/2 C sugar shopping list
- 1 can (sm) pumpkin shopping list
- 1 T imitation vanilla shopping list
- 3/4 c of brown sugar shopping list
- 2 t of all spice shopping list
- 1/2 c sour cream shopping list
- 1 container (sm) whipped topping shopping list
- 1 t ginger shopping list
- 2 graham cracker crusts shopping list
- Optional: 1/4 c chopped pecans shopping list
How to make it
- Preheat the oven @ 350 degrees.
- Using a mixer, set on low, mix the first 4 ingredients together in a large bowl. Set aside.
- Using a mixer, set on low, mix the next 4 ingredients together in a medium bowl. Set aside.
- Fold in 1/4 of the cheesecake mixture into the pumpkin mixture.
- Fold half of the cream cheese mixture into each graham cracker crust.
- Fold half of the pumpking mixture on top of the cream cheese mixture. Gentlely swirl the mixures (don't mix completely!) together, then smooth the mixture out.
- Bake to cheesecakes for one hour, or until a toothpick to the center comes clean.
- Remove cheesecakes from oven and cool for about an hour.
- While cheesecakes are cooling, mix the container of whipped topping with the ginger.
- After cheesecakes are cool, spread a layer of sour cream over each.
- Then layer with whipped topping mixture.
- Optional: sprinkle chopped pecans over whipped topping mixture.
- Enjoy!
