Pakora

- 5oz plain flour shopping list
- 1 tsp turmeric shopping list
- 1 tsp whole cumin seeds, lightly toasted, then ground shopping list
- 1 tsp fennel seeds, lightly toasted then ground shopping list
- 1 tsp garam masala shopping list
- salt and fresh black pepper shopping list
- 3/4 oz fresh coriander, finely chopped shopping list
- 1 egg, beaten shopping list
- 5fl oz milk shopping list
- 2oz butter, melted shopping list
- 3 oz ocra, topped and tailed, then cut into rings shopping list
- 2 carrots peeled and coarsely grated shopping list
- 1 courgette coarsely grated shopping list
How to make it
- In a bowl combine together the first 7 ingredients
- then add the egg, milk and butter and mix together to form a stiff batter
- add the vegetables and mix all the ingredients well
- heat a deep fat fryer to 190c/375f
- drop a few spoonfulls of the mixture into the the oil and cook making sure they dont stick together, cook for 2-3 minutes until golden brown, dont make them to big, about 2" round
- drain on kitchen paper and keep warm till all are cooked
- serve with a cucumber raiti dip
