TURKEY BISCUIT POTPIE

- Ingredients: shopping list
- 1 large onion, chopped shopping list
- 1 garlic clove, minced shopping list
- 1 ½ cups cubed peeled potatoes shopping list
- 1 ½ cups sliced carrots shopping list
- 1 cup frozen cut green beans, thawed shopping list
- 1 cup reduced-sodium chicken broth shopping list
- 4 ½ tsp. all-purpose flour shopping list
- 1 can ( 10 ¾ -oz ) reduced-fat condensed cream of mushroom soup, undiluted shopping list
- 2 cups cubed cooked turkey shopping list
- 2 Tbs. minced fresh parsley shopping list
- ½ tsp. dried basil shopping list
- ½ tsp. Dried thyme shopping list
- ¼ tsp. pepper shopping list
- Biscuits: shopping list
- 1 cup all-purpose flour shopping list
- 2 tsp. baking powder shopping list
- ½ tsp. Dried oregano shopping list
- 2 Tbs. butter or margarine shopping list
- 7 Tbs. 1% milk shopping list
How to make it
- Preheat oven at 400.
- In a large saucepan coated with cooking spray, cook onion and garlic over medium heat until tender. Add the potatoes, carrots, beans and broth; bring to a boil. Reduce heat; cover and simmer for 15 – 20 minutes or until potatoes are tender.
- Remove from the heat. Combine the flour and mushroom soup; stir into vegetable mixture. Add the turkey and seasonings. Transfer to a 2 quart baking dish coated with cooking spray.
- In a large bowl, combine the flour, baking powder and oregano. Cut in the butter or margarine until evenly distributed. Stir in milk. Drop batter in six mounds onto hot mixture.
- Bake, uncovered, at 400 for 20 – 25 minutes or until a toothpick inserted in the center of biscuits come out clean and biscuits are golden brown.
