How to make it

  • Make the Dressing:
  • Mince a fresh clove of garlic and add to it a very small minced onion.
  • Dress this with honey, to taste.
  • Sprinkle fresh mint which you have torn on the mixture.
  • Finish the dressing with red wine vinegar and twice the amount of hazelnut oil as the vinegar (for instance, if you use 1/4 cup vinegar, use 1/2 cup oil).
  • Whisk this together to emuslify.
  • Add chopped hazelnuts, stirring in.
  • Mince the prosciutto and deep fry it crispy. Drain on paper towel and set aside a moment.
  • Wedge and skin one peach per serving and set aside.
  • Make the cheese balls:
  • Heat the cherry jam with 2 tablespoons water until JUST warm.
  • While the jam is warming, make balls of a tablespoon of cheese each. This should make about 4 cheese balls.
  • Coat the cheese balls in the cherry sauce, very quickly, or the cheese will begin to melt.
  • Roll the cherry-covered cheese balls in the fried prosciutto and set aside.
  • Clean the spinach to your liking, toss with some of the dressing and put in salad dishes.
  • Arrange the peaches (one whole peach per person) atop the spinach.
  • Arrange the cheese balls on the salad.
  • Dress the salad with additional dressing, if desired.
  • You can also sprinkle more hazelnuts on top.
