Oaxacan - garlic and chili flavored peanuts

- 5 small dried red chilies shopping list
- 3 cloves garlic shopping list
- 2 tsp. olive oil shopping list
- 2 pounds blanched unsalted peanuts shopping list
- 1 tsp. coarse salt shopping list
- 1/4-1/2 tsp. chile powder shopping list
- (You can add more red chilies and garlic to taste, but don't use less shopping list
- than the recipe calls for.) shopping list
How to make it
- Heat chilies, garlic, and oil in a heavy skillet until garlic turns
- golden.
- Stir frequently so it doesn't scorch
- Remove chilies and garlic, and pour peanuts into oil.
- Stir over medium heat about 5 minutes until slightly browned.
- Sprinkle with salt and chili powder and stir well.
- Remove from heat and store in a covered jar or tin.
- Store at least 24 hours before serving.
- These improve with age.
- Chiles and garlic can be returned to peanut mix if desired for color and flavor.
