- 35 or 40 marshmallows cut into pieces of enough minis to match shopping list
- 300g pkg of semi-sweet chocolate chips shopping list
- 2 tbsp butter shopping list
- 1 whole egg shopping list
- 1 cup icing sugar, sifted shopping list
- 1/2 tsp vanilla shopping list
- 3 - 4 oz nut meats shopping list
- 3 oz flaked coconut shopping list
How to make it
- Melt the chocolate chips and butter in the microwave until just melted (times will vary depending on unit)
- Mix thoroughly and add icing sugar, egg and vanilla
- Mix thoroughly again
- Mix marshmallows in gently to retain some shape and texture
- Mixture is ready to mold when consistency is putty-like
- If mixture is too soft to mold, refrigerate for a few minutes and try again.
- On waxed paper place nut meats and coconut along with a little more icing sugar.
- Put the chocolate mix on top of this and roll up into a log.
- Wrap tightly in wax paper and refrigerate several hours.
- When well chilled, break or slice into small pieces.
