Cheddar Corn Croquettes Recipe
Crunchy little logs of cheesy corniness, really yummy! Make large batches and freeze on cookie sheets then bag up; thaw and reheat on a rack in a 350F oven.

Ingredients
  • 2 large potatoes, diced small to make 3 cups
  • 1 1/2 cups grated medium Cheddar cheese
  • 12 oz can (or equivalent fresh or frozen) corn, drained
  • 1/4 cup green onion, minced
  • 1/4 cup green pepper, minced
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 2 egg yolks
  • 3/4 cup fine dry breadcrumbs
  • Vegetable oil for shallow frying
  • Breading:
  • 2 cups fine, dry breadcrumbs
  • 2 egg white, lightly beaten

Directions
  1. In a large bowl combine all ingredients except oil and breading ingredients. Mix thoroughly (easiest to use your hands) and shape into 3" sausage shapes (croquettes).
  2. Roll each croquette in egg white and then inbreadcrumbs.
  3. In a large nonstick skillet, heat about 1/4" depth of oil over medium-high heat. When oil is hot, add croquettes to the pan in a single layer, trying not to let them touch (they have a tendency to stick together if they get too chummy).
  4. Reduce heat to medium and fry, turning, until well browned and crunchy, about 10-12 minutes.
  5. VARIATIONS:
  6. Fish Patties: Substitute 1 1/2 cups cooked and flaked salmon, tuna or cod for corn. Omit green pepper and substitute equal amount of flat-leaf parsley, chopped. Shape mixture into round patties and continue as above.
  7. Ham, Sausage or Corned Beef Croquettes: Omit corn kernels and substitute 1 1/2 cups leftover (shredded) cooked ham, sausage or corned beef. Continue as above.
