How to make it

  • Put 1 cup cold water in mixing bowl and add gelatin. Stir to combine and let sit for 30 minutes.
  • While the gelatin is resting prep pans by dusting with powdered sugar to prevent marshmallow from sticking.
  • In a large pot add remaining 1 cup water, sugar, salt and corn syrup. Make sure you use a deep pot as mixture will rise up in the pan when it boils.
  • Stir mixture to dissolve sugar scraping edge of pan to make sure the crystals are melted.
  • Attach candy thermomoter to side of pan. Do not allow tip to touch bottom of the pan.
  • Bring mixture to boil on high heat. Syrup will foam up and then go down. Keep on high until candy thermometer reaches hard ball stage at 245 degrees.
  • Remove from heat and gradually pour into gelatin mixture with mixer on low. Put splash guard on mixer bowl and increase speed to medium high. Continue to mix for 20 minutes (Yes, 20 minutes!)
  • Add vanilla and mix again for 5 minutes.
  • Pour mixture into prepared pans and let sit uncovered overnight.
  • Unmold or cut the next day. A wet knife makes cutting easier.
  • Drop marshmallows in a ziplock bag of powdered sugar to dust all sides. Knock off extra sugar and enjoy!
  • Can also be dipped in melted chocolate.
