Toms Easy Jambalaya

- 1 and a 1/2 cups long grain rice (Uncle Ben's converted brown or white works well) shopping list
- Half a medium onion diced small shopping list
- half a bell pepper diced small shopping list
- 1 tsp paprika shopping list
- 1 pkg( rope) smoked sausage sliced thin shopping list
- 2 cups diced cooked chicken or to your taste shopping list
- 1 small can Ro-tel green chilies and tomatoes or a small can of stewed tomatoes shopping list
- 3 cups water seasoned with chicken bouillon (enough to make slightly salty) shopping list
- One small amount of celery seeds (less than a 1/4 tsp.) shopping list
- black pepper if you like shopping list
- 1/2 tsp fresh garlic or garlic powder shopping list
- red pepper or louisiana hot sauce can be added for heat shopping list
- 1 bay leaf shopping list
How to make it
- Enough oil or olive oil to brown sausage, pepper and onions. When they are browned add the paprika and garlic saute a minute and add water, tomatoes and chicken (taste for salt). Garnish with chopped green onions and chopped tomatoes if you like.
- simmer till rice is done. Please don't overcook the rice this is not good with mushy rice.
- If you make a huge batch have a way to cool it down quickly or put in an ice bath, because this rice will continue to cook along time after you turn the fire off. After it is done you can fluff up with a fork, a spoon will break up the rice.
- Serve with garlic bread and a nice vegetable, a salad of fresh sliced tomatoes drizzled with balsalmic vinegar works well ( add some sliced mozzarella).
