How to make it

  • cut a small slice off ends of eggs so they will stand upright
  • Crumble yolks in a small vbowl with the sliced off ends of eggs, chopped
  • Bring salsa to a boil over med-hi heat and then simmer in saucpean and cook until liquid has evaporated about 5 minutes
  • Stir in shrimp, cook to opague- 1 to 2 minutes
  • Stir in cumin, cilantro, onions, and reserved yolks and whites
  • Cover filling and egg halves and chill till serving
  • When ready to serve, spoon filling inmto eggs and top each half with a jalepeno pepper slice
