Eggplant Tortilla

- 1 tbsp. olive oil shopping list
- 1 cup diced onion shopping list
- 6 cups diced peeled eggplant shopping list
- 1 green pepper minced shopping list
- 4 cloves minced fresh garlic shopping list
- 1 tsp.salt shopping list
- 1 tsp.fresh black pepper shopping list
- 1 cup shredded Monteray Jack cheese shopping list
- 2 cans rotel(diced tomatoes with green chiles shopping list
- 12 corn tortillas shopping list
How to make it
- saute' onion in olive oil for about 5 minutes on medium heat.
- Add eggplant,salt and pepper and cover.
- Cook 10-15 minutes,stirring often,until eggplant is soft.
- Add green pepper and garlic and saute' about 5 more minutes or until green pepper is softened.
- Add cheese to the eggpant mixture.
- Roll 1/4 cup eggplant mixture in each tortilla and place in cassorole dish sprayed with Pam.
- After all the tortillas have been used,and dish is full,pour Rotel or any sauce of your choice,over them.
- Top with more cheese.
- BAKE:350 degrees for 30 minutes.
