  • Note: as I watched this I beleive she said the sugar should get to the hard ball stage , suggest you may want to use a candy thermometer!
  • DIRECTIONS
  • Boil sugar, syrup and water unit it spins a thread 3 inches long.
  • Beat the egg whites, just before they get stiff
  • Pour syrup mixture slowly over beaten egg whites, beating fast so syrup does not harden.
  • When you hold up a spoon and it pours slowly and is not shiny, quickly add flavoring and nuts and drop by spoonfuls on waxed paper.
  • let cool

    This is like a confection, soft a bit chewy like a marshmallow but light and airy texture
