Toffee-topped christmas fruit slice

- 125 g butter, at room temperature shopping list
- ¼ cup sugar shopping list
- 1 egg yolk shopping list
- 1 tsp vanilla shopping list
- 1 ½ cups plain flour shopping list

- 375 g mixed dried fruit shopping list
- 1 Tbsp chopped glace cherries shopping list
- 2 Tbsp plain flour shopping list
- 1 egg shopping list
- 1 Tbsp brown sugar shopping list
- 1 Tbsp brandy shopping list
- 1 tsp vanilla shopping list

- 1 cup sugar shopping list
- ½ cup water shopping list
- 1 Tbsp butter shopping list
How to make it
- ----***----FOR THE BASE----***----
- Preheat oven to 180°C. Line a slice pan with baking paper.
- Use electric beaters to beat butter and sugar together until fluffy. Beat in egg yolk and vanilla.
- Mix in the flour by hand until well combined. Press into prepared pan and bake for 15 minutes, or until lightly golden. Set aside to cool a little. (Leave the oven on).
- ----***----FOR THE FILLING----***----
- In a large bowl, combine dried fruit, cherries and flour.
- In a separate bowl combine the egg, sugar, brandy and vanilla. Mix well and add to the fruit. Stir until well combined.
- Spoon over the base and return the slice to the oven for 20 minutes.
- ----***----FOR THE TOPPING----***----
- - You can start making the topping about 10 minutes after putting the slice in the oven.
- Combine the sugar and water in a small saucepan and stir over low heat until the ALL sugar has dissolved. Now stop stirring, put your spoon down and bring the mixture to the boil. DO NOT STIR. Let it boil away until it just begins to turn a nice golden colour (be patient, could take like 10 minutes) then remove from heat and add butter, swirling the pan to melt it in.
- The slice should’ve come out of the oven by now so while its still hot, pour the toffee evenly over the top.
- Let it cool slightly then, with a hot knife, score squares.
- Allow to cool completely before slicing, then remove from pan.
