How to make it

  • Preheat the oven.
  • Cut the butternut squashes in half lengthways and scoop out the seeds. Cut in half again, then put on to a roasting tray.
  • Drizzle with olive oil, season and roast for 40 minutes.
  • Put the butter into a bowl with the thyme leaves and chilli. Mix well together.
  • Add a little of the mix to each slice of cooked butternut squash to serve.
