Roasted Butternut Squash

- 3 butternut squashes shopping list
- 3 tbsp olive oil shopping list
- 2 oz butter shopping list
- 3 tbsp freshly chopped thyme leaves shopping list
- 1 red chilli, deseeded and finely chopped shopping list
- paprika and salt to taste shopping list
How to make it
- Preheat the oven.
- Cut the butternut squashes in half lengthways and scoop out the seeds. Cut in half again, then put on to a roasting tray.
- Drizzle with olive oil, season and roast for 40 minutes.
- Put the butter into a bowl with the thyme leaves and chilli. Mix well together.
- Add a little of the mix to each slice of cooked butternut squash to serve.
