SOFT TACO BURGERS

- Ingredients: shopping list
- 1 can fat-free refried beans shopping list
- 1 can ( 4-oz ) chopped green chilies, divided shopping list
- ¼ cup chopped onion shopping list
- ¼ tsp. salt shopping list
- 1 ½ pounds lean ground beef shopping list
- 1 cup ( 4-oz ) shredded reduced-fat cheddar cheese shopping list
- 8 flour tortillas ( 6 inches ), warmed shopping list
- 1 cup chopped lettuce shopping list
- 1 medium tomato, chopped shopping list
- ½ cup salsa shopping list
How to make it
- In a bowl, combine the beans, 2 tablespoons green chillies, onion and salt. Crumble the beef over mixture and mix well. Shape into eight 5-inch patties. Top each patty with 2 tablespoons cheddar cheese; fold in half and press edges to seal, forming a half moon.
- If grilling the burgers, coat grill rack with non-stick cooking spray before starting the grill. Grill burgers, uncovered, over medium heat or broil 4 inches from the heat for 7-9 minutes on each side or until meat is no longer pink and a meat thermometer reads 160. Serve on tortillas with lettuce, tomato, salsa and remaining chilies. Yield: 8 servings.
