How to make it

  • Mix kosher salt and sugar with water in a container large enough to hold turkey. Place turkey in this brine 24-48 hrs. Turkey must be submerged.
  • if brining for 48 hrs change brining solution after 24.
  • Rinse turkey off and pat dry. Allow to sit in the fridge for 1 hr uncovered.
  • heat oven to 350.
  • Place turkey on a roasting pan or cake pan and roast uncovered for 90 minutes.
  • Poke holes in sweet potatoes and stick in oven directly on the rack
  • Take out turkey and smother with bbq sauce and roast another hour.
  • remove potatoes when done ( 45-60 min)
  • Cut the top off running lengthwise
  • Remove potato flesh and stick in a mixing bowl with butter and spiced sugar. Mash them
  • Add the cream cheese, pecans and mix thouroughly.
  • Sprinkle top with sugar and put under broiler for 1-2 minutes.
