How to make it
- Preheat oven to 150 C, Grease a 20cm round cake tine and line the base with baking paper.
- Place Orange in a saucepan full of water boil for 10 minutes, then peel and remove any seeds, place flesh in a food processor or blender and puree, strain through sive into bowl using a spatula to get all the juice, discard the pulp.
- In a large bowl beat eggs and sugar until thick and pale. Add almond meal, baking powder, orange juice and zest and mix well.
- Poor into cake tin and bake for 45 minutes or until top is spongy to touch and lightly browned. Cool in tin for 5 minutes.
