Wheat free Fructose Friendly Shortbread

- 180grams unslated butter melted and still warm shopping list
- 75grams granulated sugar (I used caster sugar as it was I had) shopping list
- 1 teaspoon vanilla essence shopping list
- 1/4 teaspoon salt shopping list
- 340 grams gluten free flout (to make it Fructose Friendly ensure the flour does not contain brown rice flour) shopping list
- sugar for dusting. shopping list
How to make it
- 9inch round baking tin (if using a pan with a removable bottom grease it if it is not removable then line with foil leaving overhang on 2 sides) or I used a biscuit tray and shaped my dough.
- In a bowl combine melted butter, sugar, salt and vanilla.
- Add flour and mix until incorporated.
- Pat and spread dough evenly through pan
- leave to rest for at least 2 hours or over night. (no need to refridgerate)
- Bake at 150C for 45 minutes
- remove from oven leave oven on and sprinkle with sugar,
- cool for 10 minutes. Cut into wedges or squares and remove from pan and place on biscuit tray, return to oven and bake for a further 15 mins
- (note my first one fell apart when I did this step so I made the next one on a biscuit tray from the start, it wasn't shaped as well but I lost less).
