Fructose Friendly Fried Rice

- 500grams turkey mince (or any other mince you wish to use, I use turkey for the Triptofen which people with Fructose Malabsorption are low on). shopping list
- a couple of handfuls of corn kernels (omit if you have a corn problem), baby spinach leaves, green beans (as of October 2009 these are found to be the only safe beans). shopping list
- 1 to 2 carrots shopping list
- 1 zucini shopping list
- 1 or 2 mushrooms (omit if you can't tolerate Manitol as they contain this, but my son can tolerate in small amounts). shopping list
- gluten free soy sauce to your taste. shopping list
- ground ginger to your taste shopping list
- 2 eggs shopping list
- 2 cups of white rice (brown rice contains fructans use this if you don't have a problem). shopping list
- olive oil (just figured out how to edit) infuse the oil with a whole clove or garlic and remove or cook whole clove in oi and then remove before cook food in oil (the oil takes on the flavour but not the fructans). shopping list
How to make it
- Finely grate carrot and zuccini, finely dice mushroom, dice beans small, finely shred spinache.
- beat egg in a bowl.
- Cook rice normal way while doing the following steps
- Heat oil in frying pan or wok (I use a large electric pan as it is a large amount). Brown off turkey mince and set aside in bowl.
- Add more oil to pan and heat throw in egg and scramble then add in veg and stir fry. (add more oil if needed) Remove from pan a set aside.
- Add oil to pan heat, throw in rice and stir fry, add mince and veg and egg back add in soy sauce and ginger. stir fry until well mixed and serve.
- If you save the left overs make sure you heat them as the soluble fibre in rice becomes insoluble when cold.
