Simple Roast Chicken

- 1 (3 pound) chicken shopping list
- kosher salt shopping list
- Freshly ground pepper shopping list
- 2 teaspoons minced thyme shopping list
- 1 tablespoon unsalted butter shopping list
How to make it
- Heat oven to 450 degrees F. Rinse the bird and then dry it very well inside and out. The less it steams, the drier the heat, the better.
- Salt and pepper the cavity, then truss the bird.
- Salt and pepper the outside of the chicken
- Place the chicken in the oven and close the door. LEAVE IT ALONE, and allow it to cook until done, about 50 - 60 minutes (ok...you are going to have to check if for doneness at 50 minutes, unless you have a thermometer that you can check outside of the oven, look for 160 degrees in the breast meat, or 185 in the thickest part of the leg/thigh).
- Remove from the oven and add the thyme and butter to the pan. Let rest 10 minutes. Baste the chicken with the juice; cut into pieces and serve.
