How to make it

  • Preheat oven to 250
  • Cover baking sheet with paper towels
  • In large nonstick skillet heat 1 tablespoon of the oil over moderate heat
  • Sprinkle fish with salt. and pepper
  • Put half the trout in the pan and cook for 2 minutes
  • Turn and cook for 2 minutes longer
  • Transfer cooked fillets to prepared baking sheet and keep warm in the oven
  • Add remaining oil to the pan then cook remaining trout fillets and add to baking sheet
  • Wipe out the skillet and melt butter over low heat
  • Add sage and pecans and cook stirring constantly for 5 minutes
  • Stir in the parsley then serve trout with butter sauce spooned over the top
