Brook Trout With Brown Butter And Pecans Recipe

Ingredients
  • 2 tablespoons cooking oil
  • 8 trout fillets
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 4 tablespoons butter
  • 1/2 teaspoon dried sage
  • 1/2 cup chopped pecans
  • 2 tablespoons chopped fresh parsley

Directions
  1. Preheat oven to 250
  2. Cover baking sheet with paper towels
  3. In large nonstick skillet heat 1 tablespoon of the oil over moderate heat
  4. Sprinkle fish with salt. and pepper
  5. Put half the trout in the pan and cook for 2 minutes
  6. Turn and cook for 2 minutes longer
  7. Transfer cooked fillets to prepared baking sheet and keep warm in the oven
  8. Add remaining oil to the pan then cook remaining trout fillets and add to baking sheet
  9. Wipe out the skillet and melt butter over low heat
  10. Add sage and pecans and cook stirring constantly for 5 minutes
  11. Stir in the parsley then serve trout with butter sauce spooned over the top
