French Toast Bread Pudding with Spiced Tapioca Glaze

- 1 loaf cinnamon bread (1 pound) shopping list
- 6 large eggs shopping list
- 3 cups milk shopping list
- 3/4 cups granulated sugar shopping list
- 1 teaspoon ground allspice shopping list
- 1 tablespoon vanilla shopping list
- 1/2 teaspoon salt shopping list
- 1/2 cup chopped walnuts shopping list
- 1 cup raisins shopping list
- 1 apple or pear, cored and chopped into small pieces shopping list
- Spiced tapioca glaze (see note) shopping list
How to make it
- Preheat oven to 350
- Grease a 9-inch square glass pan
- Cut bread into 1/2 to 1 inch cubes
- Combine eggs, milk, sugar,allspice, vanilla and salt in a large mixing bowl
- Whisk until well blended
- Gently stir in walnuts, raisins and chopped fruit
- Fold in bread cubes until most of the liquid has been absorbed
- Spoon into prepared pan
- Bake for 25-30 minutes, until top is browned and a toothpick inserted in the center comes out clean
- To serve, cut warm bread pudding into squares and drizzle with Spiced Tapioca Glaze
- NOTE: To make glaze, whisk together 1 cup tapioca pudding (homemade, from a mix or purchased), 2 cups heavy cream and 1 teaspoon ground allspice.
