How to make it

  • Put the butter, sugar, milk and vanilla in a microwave-safe bowl and heat on high to boil. We do it in three parts - 3 minutes, stir, 2 minutes, stir, 2 minutes stir - but the exact time will depend on your microwave. Don't overdo it or the sugar will get all grainy.
  • Stir in the oatmeal, coconut and cocoa until well mixed but do it quickly so that it doesn't start to set in the bowl.
  • Drop by spoonsful onto waxed paper and let cool to set.
