How to make it

  • Use whole, deboned chicken breasts. Cut each breast, lengthwise into 4 pieces.
  • Combine marinade ingredients:
  • Peanut butter, cilantro, chili sauce, salt, Cayenne pepper, black pepper, lemon juice and brown sugar. Add the chicken to the marinade and marinate in the refrigerator overnight or up to 2 days.
  • Place the chicken pieces in an undulating pattern on 6-8 skewers. You can alternate with green peppers, if you wish.
  • Broil or grill for 5 to 6 minutes, turning once.
  • Note: Be careful not to overcook the chicken. If you aren't sure, cook one and test it. Then adjust your cooking time, if you need to.
