Avocado Cake

- 1 cup sugar shopping list
- 1/2 cup butter shopping list
- 2 eggs shopping list
- 1 cup mashed avocado shopping list
- 1/2 cup buttermilk shopping list
- 1 tsp baking soda shopping list
- 1 1/2 cups all-purpose flour shopping list
- 1/2 tsp nutmeg shopping list
- 1/2 tsp cinnamon shopping list
- 1/2 tsp allspice shopping list
- 1/2 cup raisins shopping list
- 1/2 cup chopped walnuts shopping list
- lemon Sauce: shopping list
- 1 cup water shopping list
- 1/3 cup sugar shopping list
- 1 tbs cornstarch shopping list
- 2 tbs butter shopping list
- 1 tbs lemon juice shopping list
- 1/2 tsp vanilla extract shopping list
How to make it
- Preheat oven to 350 degrees
- Cream sugar and butter, add the 2 eggs and avocado and mix well.
- Add the baking soda to the buttermilk and add to the batter.
- Add spices to flour and add to the batter all at once and mix well.
- Dust the raisins and walnuts lightly with flour and add to the butter
- Pour into well-greased Pyrex pan (8" x 10") and bake for 35-40 minutes. (This can be stored or frozen.
- Serve with a lemon sauce.
- Lemon Sauce:
- Boil until clear and serve warm over cake.
