Old Fashioned Potato Soup

- 2 qts water shopping list
- 3 lbs peeled, sliced potatoes shopping list
- 1 cp finely diced celery shopping list
- 1 cup liced greed onions shopping list
- 3 tbs. chicken boulion shopping list
- 1 tsp. basil shopping list
- 1 tsp thyme shopping list
- 1 tsp dill weed shopping list
- 1/4 tsp nut meg shopping list
- 1/2 tsp course ground pepper shopping list
- 3 tbs butter shopping list
- 1 qt half and half. shopping list
How to make it
- Peel potatoes, chop celery and onions, place in water. Add boulion and herbs. Cook slowly untill every thing is tender. Lightly mash with a potato masher to break in to small pieces. Add butter and half and half. Simmer gently about 15 minutes. Do not boil. You can make this with milk but it isn't as good. Also if you like your soup thick you can add flour as a thickener. We love the thinner broth. I usually make some kind of crusty bread to serve with this.
