How to make it

  • cook rice according to pkg directions
  • place all cut up vegetables in a large bowl, coat with olive oil, salt and pepper. Spread vegetables except green onions on a large cookie sheet and bake 10 min in a 475 degree oven, turn vegetables and cook 5 minutes longer or until carmalized.
  • Add veg and onions to rice, stir in parmesan cheese, season with salt and pepper to taste
