- 1 cup of long grain and wild rice (cook according to pkg) shopping list
- 1 red pepper chopped ( i like fairly large peices) shopping list
- 1 pkg mushrooms sliced shopping list
- 8 stalks of asparagus cut into pieces shopping list
- 1 carrot cut into match stick pieces shopping list
- 1 small zuchinni cut into fairly large chunk shopping list
- 3 large green onions chopped shopping list
- olive oil shopping list
- salt shopping list
- pepper shopping list
- 3/4 cup of freshly grated parmesan shopping list
How to make it
- cook rice according to pkg directions
- place all cut up vegetables in a large bowl, coat with olive oil, salt and pepper. Spread vegetables except green onions on a large cookie sheet and bake 10 min in a 475 degree oven, turn vegetables and cook 5 minutes longer or until carmalized.
- Add veg and onions to rice, stir in parmesan cheese, season with salt and pepper to taste
