How to make it

  • In heavy duty pot, place rice, almond milk, cinnamon, salt, maple syrup and bring to a boil.
  • Then reduce heat and cook and stir very frequently at a low bubble until rice has absorbed liquid and has become soft and tender.
  • Adjust sweetness if desired to taste
  • Remove from burner, cover and cool to room temp
  • Then chill well
  • Note: when cooling this pudding will not get any thicker than the finished product, there is no fat or dairy
  • May serve warm or chilled
