Slow Cooker Chile Verde Soup

- 2 ½ lbs of pork roast, chopped shopping list
- 1 onion, chopped shopping list
- 5 cloves of garlic, chopped shopping list
- 2 large size cans of chopped green chiles shopping list
- 1 28oz can of green enchilada sauce shopping list
- 2 cans of chicken broth shopping list
- *add water to cover the mixture by a few inches shopping list
- ½ jar of salsa (I use a spicy green chile one) shopping list
- 1 can of chopped or diced tomatoes shopping list
- 1 28 oz can of Mexican hominy (white) shopping list
- 1 or 2 tsp cumin shopping list
- 1 or 2 tsp oregano shopping list
- 1 or 2 tsp coriander shopping list
- 1 tsp cinnamon shopping list
- ½ tsp “Cholula” spice* shopping list
- salt and pepper shopping list
- A few handfuls of chopped cilantro shopping list
- A sprinkling of tapioca (for thickening) shopping list
- A sprinkling of yellow cornmeal (for thickening) shopping list
How to make it
- Season the pork with salt and pepper and Cholula and brown it really well. Put it in the crockpot. Cook the onions and garlic and add to the crockpot. Deglaze the pan with about a cup of water and add the liquid. I strained mine first. Add everything else. I cook it on low for about 9 or 10 hours.
- Adjust it the way you like! I’m always adding a little more of this and a little more of that. I always save some fresh cilantro for adding at the very end. I garnish with queso fresco cheese.
- *Cholula spice is in the Mexican section of your grocery store.
