Chocolate Mocha Mud Cake

- 475gm of good quality dark chocolate shopping list
- 3 cups of sugar (yes that's right!) shopping list
- 250gm of butter shopping list
- 2 cups of espresso coffee (from a machine) shopping list
- 4 eggs shopping list
- 3 cups of flour shopping list
- 3 teaspoons of baking powder shopping list
- 1 teaspoon of salt shopping list
- Icing: (for one cake) shopping list
- 2 cups of icing sugar shopping list
- 3 tablespoons of softened butter shopping list
- hot water shopping list
- Berry sauce: shopping list
- 1 packet of frozen mixed berries shopping list
- 3 tablespoons of white sugar shopping list
- 2 teaspoons of cornflour shopping list
How to make it
- Cake:
- Place the chocolate, sugar and butter into a bowl then pour the hot coffee over the top and whisk ingredients until the chocolate is melted and the sugar dissolved.
- Beat the eggs into the chocolate mixture one by one until thoroughly mixed.
- Gradually add the remaining sifted ingredients until thoroughly mixed.
- Pour mixture evenly into 2 greased and lined 22cm springform tins and bake at 140 degrees celcius
- Icing:
- Mix the icing ingredients together and microwave on high for 1 minute until runny
- Pour icing over cake and leave to set
- Berry Sauce:
- Place the berries and sugar into a saucepan and cook on low until the sugar has dissolved.
- Stir in the cornflour until sauce has thickened.
- Serve cake warm or cold with cream and drizzle berry sauce over the top....YUM

I have similar recipe of this one but I use chocolate fudge sauce instead but berry sauce might be better so i will try this for sure. High 5.
