Bermuda Spinach Salad

- 4 Hard boiled eggs shopping list
- 1/4 pound bacon shopping list
- 1 pound baby spinach, rinsed shopping list
- 1 1/2 ounces croutons shopping list
- 1/4 cup sliced fresh mushrooms shopping list
- 1/2 onion, chopped shopping list
- 2 tablespoons sugar shopping list
- 1/2 teaspoon salt shopping list
- 1/2 cup olive oil shopping list
- 2 tablespoons and 2 teaspoons cider vinegar shopping list
- 1/4 teaspoon ground black pepper shopping list
- 1/2 teaspoon celery seed shopping list
- 1 1/2 teaspoons dijon-style mustard shopping list
How to make it
- Cook bacon until browned, drain, crumble and set aside
- Prepare the dressing in a blender by combining the onion, sugar, salt, oil, vinegar, pepper, celery seed and mustard
- Blend until smooth
- In a large salad bowl, combine the chopped hard boiled eggs, bacon, spinach, croutons and mushrooms
- Toss to mix
- Pour enough dressing over salad to lightly coat
- Toss and serve
