How to make it

  • Preheat oven to 400 F.
  • For the dough mix butter, flour and salt with fingertips until crumbly. Add sugar and mix lightly.
  • Combine lemon juice and rind, egg yolks, and water and add to flour mixture to form a dough. Chill.
  • After chilled pat dough into a large pan until about 1/4 inch thick.
  • Lay the apple slices in parallel rows on top of dough.
  • Mix sugar and cinnamon together and sprinkle on top of apples.
  • Beat egg yolk and cream together and drip over apples.
  • Bake 20-30 mins, or until crust is well baked and apples are soft.
